Grown in Yame, this premium single-origin matcha offers a deeper, more robust profile than lighter ceremonial teas. Yame is known for producing shaded green teas with substantial body and a distinct mineral character, qualities that are fully expressed here.

The leaves are shade-grown before harvest, then steamed, dried, and stone-milled using traditional granite mills. This slow process preserves the tea’s aromatic complexity and yields a smooth, fine powder that whisks easily.

In the bowl, the flavor is bold and concentrated, with pronounced umami, a deeply mineral backbone, and less overt sweetness. The finish is lingering and savory, appealing to experienced matcha drinkers who prefer structure and depth over softness.

Excellent as usucha and especially compelling as koicha, where its density and layered character become more pronounced.

Tasting Notes

The most structured of the three, and the least sweet. Mineral and firm, with a stony quality through the middle and a drier finish that holds its shape rather than fading.

Yame rewards attention and punishes carelessness — a few degrees too hot and it turns austere. Drinkers who find other matcha too soft tend to end up here and stay.

How to Prepare

2g matcha · 70ml water · 70°C

Sift into a warmed, dry bowl. Use slightly more water than you would for Uji; Yame is concentrated and a longer pour gives its structure somewhere to open up.

Work it to a paste first, then add the remaining water and whisk for twenty seconds in a W motion.

Keep the water at or below 70°C. This is the least forgiving tea we sell, and heat is the only way to genuinely spoil it.
