Made from roasted Japanese green tea leaves, hojicha powder offers a distinctly warm and comforting alternative to matcha. The roasting process transforms the tea’s natural grassy notes into aromas of toasted grain, nuts, and light caramel while reducing its caffeine content.

Ground into a fine powder, it can be whisked with hot water, blended into milk, or used in baking. The flavor is mellow and rounded, with a gentle sweetness and a deeply toasty finish.

Tasting Notes

Roasted and low in caffeine, with almost none of the vegetal character of matcha. Toasted grain, a little caramel, a faint woodsmoke at the edges. Warm rather than bright.

Because the leaf is roasted rather than shaded, it is naturally gentle — most people find it the one they can drink in the evening.

How to Prepare

2g hojicha · 90ml water · 90°C

Unlike matcha, hojicha wants genuinely hot water. The roasting has already driven off the delicate compounds that heat would otherwise damage, so there is nothing left to scald.

Sift, add water, whisk for ten to fifteen seconds. It froths less than matcha and is not supposed to.

Excellent with milk, and the powder holds its flavour in baking where matcha usually turns dull and brown.
